Clementine, Lavender & Meyer Lemon Fizz

This Clementine, Lavender & Meyer Lemon Fizz brings bright and sunny, seasonal flavours for a special New Year's Eve cocktail!

Ingredients

Lavender simple syrup

  • 1/4 cup dried lavender can be found at specialty spice stores or ordered online
  • 1/2 cup boiling water
  • 1/2 cup water

Cocktail

  • 3 Meyer lemons
  • 12 clementines
  • 1/4 cup lavender syrup
  • 1 bottle sparkling water flavoured or unflavoured

Instructions

  • To make lavender syrup: Mix together equal parts bowling water and sugar, slowly stirring in dried lavender. Let sit for about 10-15 minutes. Using a fine mesh sieve, strain mixture so that dried lavender is removed from syrup.
  • Using a juicer (can be as big as an appliance, or as simple as a small handheld wood one), squeeze juice from all of the Meyer lemons and clementines. Use a strainer to remove pulp and seeds, then pour into big pitcher.
  • Add lavender syrup and let chill until guests arrive. When ready to drink, add sparkling water and let guests add their own ice cubes.
  • Garnish with dried lavender (optional) and enjoy!
