Clementine, Lavender & Meyer Lemon Fizz

Servings: 1 pitcher (about 6-8 cocktails)
Lavender simple syrup
- 1/4 cup dried lavender can be found at specialty spice stores or ordered online
- 1/2 cup boiling water
- 1/2 cup water
Cocktail
- 3 Meyer lemons
- 12 clementines
- 1/4 cup lavender syrup
- 1 bottle sparkling water flavoured or unflavoured
To make lavender syrup: Mix together equal parts bowling water and sugar, slowly stirring in dried lavender. Let sit for about 10-15 minutes. Using a fine mesh sieve, strain mixture so that dried lavender is removed from syrup.
Using a juicer (can be as big as an appliance, or as simple as a small handheld wood one), squeeze juice from all of the Meyer lemons and clementines. Use a strainer to remove pulp and seeds, then pour into big pitcher.
Add lavender syrup and let chill until guests arrive. When ready to drink, add sparkling water and let guests add their own ice cubes.
Garnish with dried lavender (optional) and enjoy!
