Chipotle Chicken Skillet Pizza
Combined with this easy peasy chipotle-marinara sauce, jalapeños, corn and a make-ahead chilli-spiced chicken breast, this pizza is going to become your next favourite.

- 1/2 ball pizza dough
- Chipotle sauce
- 1/2 cup shredded cheddar cheese +more if desired
- 1/2 cup shredded mozzarella cheese +more if desired
- 1 cooked chicken breast thinly sliced (instructions below)
- 1/3 cup red onion
- 1/2 cup corn
- 1 jalapeño pepper thinly sliced and de-seeded
- 1/3 cup diced fresh tomatoes
- 1/3 cup chopped cilantro
- 1 tsp olive oil
- 1 clove garlic minced
- 1 cup jarred crushed tomatoes passata
- 1 in chipotle pepperadobo sauce minced
- 1/2 tsp brown sugar
- 1/2 tsp salt
- 1/4 tsp pepper
- 1 chicken breast
- 1 tbsp olive oil
- 1 tsp chili powder
- 1/2 tsp garlic salt
- 1 tsp sea salt
- 1/2 tsp pepper
Preheat oven to 425 F. Coat chicken in spices and bake in the oven once preheated for 25 minutes.
Meanwhile, roll out pizza dough, and stretch into oiled frying pan (preferably cast iron, but make sure it's oven safe).
Take out chicken, and turn oven up to 475 F. Once preheated, put skillet with pizza dough into oven and cook for 8-10 minutes, until dough is slightly cooked.
Meanwhile, slice chicken once cooled, and prepare pizza ingredients.
Take dough out of the oven, then top with sauce, cheese and toppings (I leave off the tomatoes and cilantro until the end). Put back into the oven and cook for another 13-15 minutes until cheese is melted and ingredients look cooked.
Remove pizza from the oven and garnish with fresh tomatoes and cilantro. Pizza should slide right out of skillet onto a cutting board.
Once cooled for a couple minutes, slice with a pizza cutter and serve immediately. Enjoy!
