These Healthy No-Bake Energy Bite Easter Nests are made with coconut, oats, cocoa and honey for a delicious, healthy snack that's low in refined sugars!

- 1/4 cup coconut oil
- 1/4 cup honey
- 1/4 cup almond butter
- 1 1/2 cups rolled oats
- 2 tbsp cocoa powder
- 3/4 cup shredded unsweetned coconut
- 1 package Cadbury mini eggs
In a large glass bowl, microwave coconut oil, honey and almond butter together for 1 minute.
Add rolled oats, cocoa powder and shredded coconut to the almond butter mixture, mixing well to combine.
Refrigerate for 30 minutes, then remove from fridge and form into balls. Flatten slightly and press thumb into centre, forming a nest. Serve with a mini egg in each one (optional) and enjoy!
