Healthy No-Bake Energy Bite Easter Nests

These Healthy No-Bake Energy Bite Easter Nests are made with coconut, oats, cocoa and honey for a delicious, healthy snack that's low in refined sugars!

Ingredients

  • 1/4 cup coconut oil
  • 1/4 cup honey
  • 1/4 cup almond butter
  • 1 1/2 cups rolled oats
  • 2 tbsp cocoa powder
  • 3/4 cup shredded unsweetned coconut
  • 1 package Cadbury mini eggs

Instructions

  • In a large glass bowl, microwave coconut oil, honey and almond butter together for 1 minute.
  • Add rolled oats, cocoa powder and shredded coconut to the almond butter mixture, mixing well to combine.
  • Refrigerate for 30 minutes, then remove from fridge and form into balls. Flatten slightly and press thumb into centre, forming a nest. Serve with a mini egg in each one (optional) and enjoy!
