Servings: 4 bowls
- Storebought falafels frozen
- 4 radishes thinly sliced
- 1 cup cooked quinoa
- 1 cup parsley finely chopped
- 1/2 cucumber sliced
- 1/2 cup hummus
Roasted cauliflower
- 1/2 head cauliflower or combo or purple/green baby cauliflower
- 1 tbsp olive oil
- 2 cloves garlic minced
- 2 tsp lemon juice
- 1/2 cup parmesan cheese
- 1/2 tsp salt
- 1/2 tsp pepper
Preheat oven to 425 F.
Toss cauliflower with olive oil, garlic, lemon juice, parmesan cheese and salt & pepper. Roast in the oven for 15-20 minutes, tossing halfway through.
Bake falafels in the oven according to package directions (usually about 10 minutes).
Meanwhile, prepare veggies and quinoa, and plate the rest of the ingredients in a large pasta bowl.
