Radish, Falafel & Cauliflower Energy Bowl

These Radish, Falafel & Cauliflower Energy Bowls are filled to the brim with tons of protein, fibre and anti-oxidants to help keep you on the go!

Ingredients

  • Storebought falafels frozen
  • 4 radishes thinly sliced
  • 1 cup cooked quinoa
  • 1 cup parsley finely chopped
  • 1/2 cucumber sliced
  • 1/2 cup hummus

Roasted cauliflower

  • 1/2 head cauliflower or combo or purple/green baby cauliflower
  • 1 tbsp olive oil
  • 2 cloves garlic minced
  • 2 tsp lemon juice
  • 1/2 cup parmesan cheese
  • 1/2 tsp salt
  • 1/2 tsp pepper

Instructions

  • Preheat oven to 425 F.
  • Toss cauliflower with olive oil, garlic, lemon juice, parmesan cheese and salt & pepper. Roast in the oven for 15-20 minutes, tossing halfway through.
  • Bake falafels in the oven according to package directions (usually about 10 minutes).
  • Meanwhile, prepare veggies and quinoa, and plate the rest of the ingredients in a large pasta bowl.
  • Enjoy!
