- 1 tbsp olive oil
- Salt & pepper to taste
- 2 chicken breasts
- 4 cups arugula
- 1/2 cup cherry tomatoes
- 1/2 cup bocconcini cheese
- 1/2 cup red onion thinly sliced
- 1/2 cup sliced basil
Balsamic dressing
- 1/4 cup olive oil
- 1/3 cup balsamic vinegar
- 2 tsp Dijon mustard
- 2 tsp honey
- 1/2 tsp salt
- 1/4 tsp pepper
Preheat grill to med-high heat or oven to 425 F.
Brush chicken with olive oil and season with salt and pepper. Cook in an oven safe dish or directly on the grill for 25 minutes (cook for 5 more minutes in the oven), turning chicken over halfway through.
Meanwhile, whisk ingredients for dressing together and set aside. Toss arugula, tomatoes, cheese, red onions and basil.
Remove chicken from oven or grill, and toss salad with dressing. Top each salad with slices from 1/2 of each chicken breast and serve.
