Slice chili pepper and place into a small bowl. Pour in vodka and let sit for at least 30 min. Skip this step if you don't want to use chili infused vodka.
Cut passionfruit in half lengthwise overtop of a medium-sized bowl. Scoop out flesh and seeds using a spoon, then pour into a fine mesh sieve that is placed over the bowl. Squeeze the juice out using the spoon, retaining the seeds.
Squeeze one lemon, then set lemon juice and passionfruit juice aside. Make simple syrup by mixing equal parts sugar and boiling water.
Meanwhile, slice remaining lemon, sprinkle with a bit of sugar and grill on either side on high heat for about 1-2 min each side. An alternative would be broiling in the oven on high for about 30 seconds per side.
Pour 1.5 oz of infused vodka into each cocktail glass. Add 1.5 oz of lemon juice to each glass. Divide passionfruit juice equally, adding some to each glass. Add 1 tsp of simple syrup to each glass, then top with ice, grilled lemon and sparkling water.
Add basil and extra sliced passionfruit as a garnish - enjoy!
