Mediterranean Burgers with Fattoush Salad
These Mediterranean Burgers with Fattoush Salad are a new twist on a traditional summer favourite! Try them bunless with pita bread for a low-carb dinner!

Burgers
- 1 lb ground chicken turkey or beef
- 1/4 cup breadcrumbs
- 1 egg
- 1 tbsp Dijon mustard
- 1 small yellow onion grated
- 1 clove garlic minced
- 3/4 tsp salt
- 1/2 tsp pepper
- 1-2 tbsp olive oil for grilling
- 1 head Boston lettuce or 1 package burger buns
Fattoush Salad
- 1 piece pita bread broken
- 1 vine tomato deseeded and diced
- 4-5 small radishes sliced
- 1/2 small red onion diced
- 1 cup parsley chopped
- 1/2 cup mint chopped
- 2 tbsp lemon juice
- 1 tsp sumac
- 3/4 tsp salt
Dill dip
- 1 cup sour cream
- 1 tbsp dill
- 2 green onions chopped
- 1/2 tsp garlic powder
- 1/4 tsp salt
For the burgers:
Preheat BBQ to med-high heat. In a large mixing bowl, mix all ingredients together well. Form meat mixture into equal-sized patties, then place in between wax paper for easy removal. You can freeze these burgers for a couple months, and they'll keep up to one or two days in the fridge depending on when you bought the meat.
When ready to grill, brush sides of each patty with olive oil until well-coated. Grill on med-high heat for about 7-8 min per side until centre of the burger is fully cooked. Don't be tempted to flip burgers too soon or they will stick to the grill and fall apart.
Once cooked, remove burgers and place on top of one piece of Boston lettuce each. Top with fattoush and serve with pita bread and dill dip.
