Course: Pizza
Servings: 8 slices

Ingredients

  • 1 ball store bought pizza dough or pizza shell
  • Pizza or tomato sauce as much as you want!
  • Shredded mozzarella cheese go for the balls of mozzarella and load your pizza up!
  • 5 eggs
  • 8 mini hash brown patties
  • 1/2 of the turkey sausage mixture crumbled
  • 8 sun dried tomatoes
  • 1/4 cup fresh chopped basil
  • 1-2 tsp red chili flakes
  • 1/4 cup parmesan cheese
  • Salt & pepper to taste

Turkey Sausage

  • 2 tbsp olive oil for frying
  • 1 lb ground turkey
  • 2 tsp fennel seeds
  • 1 tsp Dijon mustard
  • 1 tsp dried parsley
  • tsp ½garlic salt
  • tsp ½paprika
  • tsp ¼cayenne pepper
  • tsp ½salt
  • tsp ¼pepper

Instructions

  • Preheat oven to 400 F.
  • Roll out pizza dough (if using) on a floured surface and stretch to desired shape. Bake in the oven on the pizza stone or baking sheet for 10 min until dough is slightly cooked.
  • Meanwhile, prepare other ingredients and mix turkey sausage in a large bowl. You'll only use about half of my turkey sausage mixture, so you can either fry it up all at once and freeze/refrigerate the leftover cooked portion, or you can do what I do and break the mixture in half while raw, and freeze one half for use in another recipe or for another pizza at a later date.
  • In a frying pan, heat olive oil over medium heat. Add turkey sausage in 1-inch sized balls, breaking up further if desired as meat begins to cook. Cook for about 7-8 min until meat is fully cooked.
  • Remove pizza from oven and spread tomato sauce overtop, then cheese. Add frozen hash browns (if you want them extra crispy fry them quickly after turkey sausage in the same pan for a couple min per side), then turkey sausage and sun dried tomatoes.
  • Crack eggs overtop and carefully place pizza in the oven. Cook for 22-25 min, watching to make sure eggs don't overcook (you can see I did this with a couple of mine, but I like my egg yolks hard anyway!). For a softer yolk, cook closer to the 15 min mark.
  • Remove from oven and garnish with chopped basil, red chili flakes and parmesan cheese. Enjoy!
