Big Mac Loaded Tater Tot Nachos

These Big Mac Tater Tot Nachos are loaded with special sauce, ground beef, pickles and cheese - a special indulgence and twist on a classic!

Ingredients

  • 1 package tater tots
  • 1/2 lb extra-lean ground beef
  • 1 cup shredded cheddar cheese
  • 1 cup iceberg or romaine lettuce
  • 1/2 small yellow onion diced
  • 1/2 cup Pickles sliced

Special Sauce

  • 1/2 cup light mayo
  • 1 tbsp ketchup
  • 1 tbsp relish
  • 1/2 tsp vinegar

Instructions

  • Preheat oven to 450 F. Spread tater tots out in one layer on a parchment lined baking sheet. Bake in the oven for 25-30 min, flipping halfway through.
  • Meanwhile, heat a large frying pan over med-high heat. Cook ground beef with salt and pepper to taste for 7-8 min, until beef is fully cooked. Set aside and prepare toppings.
  • Prepare special sauce by mixing all ingredients together. Spoon into a plastic bag, then cut off the end of one of the corners.
  • Remove tater tots from the oven and sprinkle cheese over top. Put back in the oven for 2-3 min until cheese is melted.
  • Remove from oven and top with beef, onions, pickles and lettuce, then drizzle sauce overtop. Serve and enjoy!

Notes

Vegetarian: Leave off the ground beef or use your favourite ground meat substitute.
Add on more toppings like chili, bacon, green onions or sour cream.
Get the tater tots nice and crispy by making them in the air fryer.
Store the tater tots and toppings in the fridge for up to 5 days. Reheat, assemble and serve!
Freeze the cooked ground beef for up to 3 months. Defrost in the fridge overnight then reheat as normal.
