Fish Taco Bowls

Ingredients

  • 2 packages The Saucy Fish Co. Chili Lime Ginger Salmon
  • 1 cup red cabbage sliced
  • 1/2 cup Corn
  • 1/2 cup pickled red onions
  • 1 head romaine lettuce
  • 1 avocado sliced
  • cilantro chopped
  • tortilla strips
  • 1 lime

Red onions

  • 1 kettle full of boiling water
  • 1 red onion sliced thinly
  • 1 cup vinegar
  • 1 tsp sugar
  • 1 tsp salt

Instructions

  • Preheat oven to 350 F. Cook salmon in pouch provided on a baking sheet for 25 minutes.
  • Meanwhile, assemble taco bowls, cook rice in a rice maker according to package directions, and prepare pickled red onions. Pour boiling water over onions slowly in a mesh sieve. Dissolve sugar and salt in vinegar. Place onions in vinegar mixture and let sit for at least 20 minutes.
  • Place all veggies inside 4 large bowls, then top rice and lettuce with one filet of salmon each. Top salmon with chili lime ginger sauce, then serve!
