Mediterranean Nacho Bar (Super Bowl Idea!)

- 1 package store-bought pitas
- 1 package Stacey's pita chips
- 1 package Storebought falafels
- 1 red onion, diced
- 1 package cherry tomatoes, sliced in half
- 1/2 cucumber, diced
- 1/4 cup crumbled feta cheese
- 1/2 jar sliced, jarred roasted red peppers
- 1/2 cup olives
- 1/2 cup parsley, finely chopped
- 1 tub Sabra caramelized onion hummus
- 1 tub Sabra toasted pinenut hummus
- 1 tub plain Sabra hummus
- 1 tub Sabra guacamole
Greek chicken (optional add-on)
- 2 chicken breasts, diced into cubes
- 2 tbsp olive oil
- 2 tbsp lemon juice
- 2 cloves garlic minced
- 2 tsp oregano
- 1/2 tsp salt
- 1/4 tsp pepper
Assemble all ingredients in small bowls buffet-style with side plates for guests to pick and choose their own toppings and create their own nachos.
If not using store bought chicken skewers, mix chicken marinade ingredients together and pour over chicken. Preheat oven to 400 F. Add chicken to mini skewers, then place on a parchment-lined baking sheet. Bake in the oven for 20 minutes until chicken is cooked through. Serve skewers alongside other toppings in a medium-sized bowl.
