Grilled Chicken with Jalapeno Peach Salsa

- 3 chicken breasts, sliced in half lengthwise
- 1 tbsp olive oil
- 2 tsp chili powder
- 1/2 tsp salt
- 1 avocado, sliced
- Side dish suggestion: baby potatoes tossed with olive oil, garlic and salt
Peach Jalapeno Salsa
- 2 peaches, diced
- 1/2 red pepper, diced
- 1/2 cup red onion, diced
- 1 jalapeno pepper, finely chopped and de-seeded
- 1/4 cup cilantro, finely chopped
- 1 tbsp lime juice
- 1/2 tsp salt
Preheat BBQ to high heat. If adding baby potatoes, add to grill and BBQ 30 minutes (I bought a pre-packaged container with seasonings and followed the package directions).
Slice chicken breasts in half lengthwise, then rub with olive oil, chili powder and salt. Add to BBQ and grill 4-5 minutes per side. Remove and set aside.
Meanwhile, mix ingredients for peach salsa together. Serve salsa on top of chicken and with baby potatoes and sliced avocado on the side. Serve and enjoy!
