Easy Healthy Pasta Carbonara
This Easy Healthy Pasta Carbonara is an indulgent, lighter version of pasta carbonara with turkey bacon and lots of vegetables as well as fresh pasta!

- 1 tbsp olive oil, divided
- 12 slices turkey bacon
- 1 (8 oz) package Button mushrooms
- 4 cloves garlic minced
- 1 red pepper, sliced
- 1/2 cup peas
- 2 eggs
- 2 tbsp water
- 1/2 cup Parmesan cheese
- Salt & pepper to taste
- 1/4 cup fresh parsley, finely chopped
Fresh pasta
- 2 cups flour
- 2 eggs
- 2 tbsp water
To make fresh pasta: Whisk egg and water together in a small bowl. Add flour to the Philips Pasta Maker, making sure you have selected the fettuccine shape. Turn pasta maker on and press start. Flour will start to mix. Slowly add in egg and water mixture through the slot in the lid - pasta maker will start to mix together dough and press out pasta; wait until the pasta is all in a bowl and set aside.
Meanwhile, fry up turkey bacon in a large skillet. Remove when fully cooked and set aside. Whisk eggs, water and parmesan cheese together in a bowl and set aside.
Add half of the olive oil to skillet and sauté mushrooms whole (I used very small button mushrooms) for 7-8 min until mushrooms are almost fully cooked. Add garlic and red pepper, sautéing another 2 minutes, then chop up turkey bacon and add back in along with peas.
Add fresh pasta and egg-water-parmesan mixture to the skillet and gently toss to coat, cooking another 2 minutes or so and seasoning with salt and pepper; serve in large bowls and garnish with parsley. Enjoy!
