Easy Summer Roll Bowls
Summer. In a bowl. Could you think of anything more delicious? I have been having a blast lately. Like, maybe having a bit too much fun. With so many outings back and forth to Toronto, I've been entirely on the go and just need quick lunches to throw together when I get too busy and forget to remind myself to eat. Don't we all have those days??
These Easy Summer Roll Bowls are like everybody's favourite season in a bowl. You just want something easy and low-maintenance this time of year, but you also want to take advantage of all the delicious, fresh produce just coming into season. I might just want to recommend that you visit the farmer's market to stock these bowls up properly!
If you've been following along with my blog, you'll know that I work from home now.?It's been absolutely amazing so far, because technically I make my own schedule, besides of course my deadlines for publications and clients. I've tried to set guidelines for myself and am very strict on my 8am wakeup time, and I try to have my breakfast and sit down to work by 9am. I might take an hour or two for lunch or to run errands, or get a midday workout in, but I always work until 6:30 or 7 at night. Anyways, what I'm getting around to say, is that even though I get to work from home I sometimes neglect to squeeze in lunch because I am constantly on the go. I've been getting into this really bad habit of running around and not eating until 3pm, at which time I remember suddenly to eat because I'm absolutely starving. You ever have a day like that? I can't stand it! You may be like that at work or school, and let me tell you these Summer Roll Bowls have saved me on more than one occasion. Toss some veg together with leftover noodles and add a protein, and you're set!?
I was inspired by Pinch of Yum's spring roll bowls recipe in creating my own bowls of deliciousness, but I made my own easy peasy vinaigrette that combines perfectly with the three different types of herbs I chose. I have to say I was also inspired by the rice paper Vietnamese summer rolls that I love ordering at restaurants. You just can't go wrong with so many veggies!?
The only thing I would have changed about this bowl is perhaps grilling the shrimp as opposed to serving them cold and tossed in the noodles. Just throw 'em on the BBQ with a little bit of lemon juice and minced garlic and you've got an amazing dinner! Finally, the vinaigrette for these Easy Summer Roll Bowls is very straightforward and simple: just a bit of soy sauce, lime juice, apple cider vinegar, hot sauce, fresh herbs and honey. Boom! Done.?
Easy Summer Roll Bowls
- 1 package rice noodles
- 16 Pre-cooked shrimp
- 1 cup Julienned cucumbers and bell peppers
- 1 watermelon radish, sliced (optional)
- 1 cup each chopped fresh cilantro, basil & mint
- 1/4 cup chopped peanuts
Easy soy vinaigrette
- 1 tbsp olive oil
- 1/4 cup soy sauce
- 1 tsp lime juice
- 1 tbsp apple cider vinegar
- 1/2 tsp hot sauce
- 2 tsp honey
- Cook noodles according to package directions. Defrost shrimp if necessary in the meantime.
- Make the soy vinaigrette by whisking all ingredients together. Chop and prepare veggies.
- In a large bowl, toss all ingredients together with vinaigrette. Enjoy!
