Coconut Matcha Melon Smoothie Bowls
These Coconut Matcha Melon Smoothie Bowls are filled with mango chunks, kiwi, banana, matcha green tea and Greek yogurt for a filling and delicious breakfast!
I've always had a love-hate relationship with Mondays.
On the one hand, I like how cozy and dreamy they are, especially as it starts to get cold out and I can see frost on the rooftops of all the houses and fresh dew on the windows. Then there's the smell of fresh coffee and the anticipatory feeling of a brand new week.
What will I accomplish?
What's on the list for this week?
I LOVE working from home because not only do I get to bask in the beauty of my own solitude, I don't have to face rush hour traffic and I get to make important decisions about my career and my workflow without having to check with anyone else.
I also get to do something different every single day, which is perhaps one of the best parts of my job. No time for boredom.
However, I am quite a creature of habit sometimes, and I love routine.
Routine as in, I like to wake up about the same time every day, plan out my meals for the week in advance and structure my day in such a way that I capitalize on all my goals – writing in the morning, for instance, when I am at my freshest, and then doing most of my photography in the afternoons when I've got a food coma after lunch.
I've also been doing a whole bunch of reading on productivity and entrepreneurship, which has really helped me to structure my day to focus on one big, important thing that will take me to where I want to be goal-wise.
Whether it's adding a portfolio page on my site to showcase my photography or reaching out to partner with a couple brands, I have added a slot in my schedule to accomplish my “One Thing” each day.
So far, it's really helping me to stay on track and keep focused in a career where I am my own boss.
I feel as if I'm building a lot of things right now and laying the groundwork for a career as a business owner – it sure ain't easy but it's seriously rewarding, and I guess that's why I've really come to love Mondays.
It's the chance to start again, to get back to the grind and see what I can accomplish. We only have so many hours in the day, after all.

I'm not a big fruit fan, with the exception of cocktails LOL.
These Coconut Matcha Melon Smoothie Bowls is just so ginormous and filling and make you feel as though everything else you're gonna eat today is okay because you've had all your servings of fruit for the entire day.
And if you add some spinach in there you'll get some veggie servings too. WIN WIN.
And I mean, you don't have to serve these Melon Smoothie Bowls in a honeydew melon but it's so much more fun that way, and you get to eat all the honeydew your heart desires.
Honestly, whenever I'm at fun family parties and there's a fruit tray around I'll be the first to take all the honeydew because it's my fave. Yep, I'm THAT person.
Coconut Matcha Melon Smoothie Bowls
- 1 honeydew melon
- 1 cup frozen mango chunks
- 2 frozen bananas
- 1 fresh banana
- 1/2 cup frozen kiwi (I use the PC Strawberries Bananas and Kiwi frozen blend and pick out the bananas and kiwi)
- 2 tbsp shredded unsweetened coconut
- 1 1/2 cups Greek yogurt
- 2 tsp matcha
- 1 cup spinach optional
- 1 banana sliced
- 1 mango sliced
- 1 kiwi sliced
- Shredded unsweetened coconut
- Chia seeds
- Hemp hearts
- Cut honeydew melon in half and scoop out seeds.
- In a large blender, add smoothie filling ingredients together and blend until thick and pureed.
- Split smoothie filling between each melon half, then add desired toppings - I added about a spoonful of chia seeds, hemp hearts and granola to each bowl, then 2-3 slices of kiwi and mango. You can sub in sliced banana for sliced mango or kiwi if desired.
- Serve right away and enjoy!
