Fish Taco Bowls
- 2 packages The Saucy Fish Co. Chili Lime Ginger Salmon
- 1 cup red cabbage sliced
- 1/2 cup Corn
- 1/2 cup pickled red onions
- 1 head romaine lettuce
- 1 avocado sliced
- cilantro chopped
- tortilla strips
- 1 lime
- 1 kettle full of boiling water
- 1 red onion sliced thinly
- 1 cup vinegar
- 1 tsp sugar
- 1 tsp salt
- Preheat oven to 350 F. Cook salmon in pouch provided on a baking sheet for 25 minutes.
- Meanwhile, assemble taco bowls, cook rice in a rice maker according to package directions, and prepare pickled red onions. Pour boiling water over onions slowly in a mesh sieve. Dissolve sugar and salt in vinegar. Place onions in vinegar mixture and let sit for at least 20 minutes.
- Place all veggies inside 4 large bowls, then top rice and lettuce with one filet of salmon each. Top salmon with chili lime ginger sauce, then serve!
