Avocado Toast & Sweet Potato Hash
Mmm breakfast!! As the weekend approaches, you may be wondering where you’re going to go out for brunch, or thinking of picking up ingredients for a delicious breakfast in bed for that special someone. Well, we’ve got you covered with this delicious twist on the classic weekend meal!
Sweet potato hash is the perfect accompaniment and a healthier, lower-calorie version of traditional breakfast hash, which usually involves some sort of potato and bacon component. We’ve incorporated some turkey bacon and fresh peppers for a delicious twist, and seasoned them with a tiny bit of our famous Cajun seasoning.
Avocado toast is a big trend in the food world these days, and a super tasty way to get in healthy fats. Topped with a fried egg and chili flakes, we love this breakfast option! Making the perfect fried egg looks easy but in reality, it can be quite challenging. We find that you have to get the frying pan just hot enough on medium heat with the perfect amount of oil–usually at least 1/2 – 1 tbsp of olive oil per egg to ensure they don’t stick. Gently crack your egg and slide it on to your greased pan, and cook on med-low heat for about 4-5 min, minding the bottom doesn’t stick.
You’ll want to try this delicious combination your next Saturday or Sunday–rethink your weekend brunch with healthy ingredients! We mixed our avocado with a bit of salsa for a kick and added some salt and pepper for more of a savoury topping for the toast. Delicious!
