I am in love with quick and easy meals when it comes to summer cooking and meal planning. I mean, the more time for me to get outside and enjoy the weather, the better…am I right?
Well, I’m coming at you with a super fast weeknight dinner idea that is bound to please those tastebuds, and it’s made all the more easy cooking the fish from frozen and cutting up all the veggies while it’s baking in the oven.
I mean, it’s practically fish taco season over here right?
I love using The Saucy Fish Co’s products because there are so many varieties of fish to choose from, and they all come ready to cook with a little sauce packet and even a sachet in which to cook the fish. It’s a no brainer for dinner in a hurry – all you need are some fresh veggies to serve alongside it and you’re looking at an effortless meal with tons of flavour.
I bought mine at my local Loblaws store in the fresh fish section – they’re super easy to grab on your way home and serve up last minute!
I love citrusy flavours with fish – especially tilapia! – so these tostadas were the perfect fit for my cilantro lime coleslaw and the salsa verde that came with the fish. I could definitely see myself with a couple of these eating dinner while sitting out on the back deck enjoying the last little bit of the sunshine.
The toppings for these Tilapia Tostadas are optional, like many of my recipes are, and it’s up to you to mix and match depending on what you’ve got on hand in the fridge. I’ve almost always got a couple tomatoes on hand and frozen corn in the freezer, and from there I throw in whatever else I need to use up that may be going bad.
You could consider add in some spinach or sprouts to top these tostadas off, and some extra cilantro doesn’t hurt. I also use bagged coleslaw and add in a little bit of extra red cabbage to save some time. The cilantro lime coleslaw is definitely the other star of this meal: all you need is a little bit of sour cream, some taco seasoning, salt, cilantro, green onions and a tiny bit of lime juice.
I think making the coleslaw while the fish is cooking in the oven is maybeeeee the hardest part of this meal?
Dinner can be one of the most challenging meals of the day for anyone to pull together, but it really doesn’t have to be hard. I urge you to resist grabbing takeout, and get back to the simplicity that is the 30-minute meal.
