Wooooo hoooo hello Friday!!! And hello Super Easy Mint and Kiwi Mojitos!
Now that the warmer weather’s coming (umm, I just saw the leaves budding on our trees this week and am too excited!), it is definitely time to start busting out all the cocktail recipes and getting ready for patio season. I’m so serious about this shit that I’m actually already planning some patio time at different places – the next three weekends in a row are all booked up as I get ready to travel downtown, have some fun, go out, let my hair down…
There is just something about the summer that I adore. Actually, scratch that. Any season but winter actually. Not that spring or fall last too long here in Canada anyway LOL.
I mean, don’t get me wrong, I love winter for maybe about a week. I love all the comfort food, I love all the blankets and cozy couch time, but past a certain point you really start to go stir crazy and wish you could go outside without feeling absolutely assaulted by the wind and the cold. It’s hard to move even in the winter..I feel like my joints get all stiff and it’s hard to find motivation to go to the gym even.
And I love the gym. Working from home, it’s my sanctuary from work at the end of the day. But in the summer, it’s lighter out later, and my body just feels this urgency to get outside and enjoy the brief season while it lasts. I’m talking whole days sipping on Super Easy Mint and Kiwi Mojitos with my girlfriends getting into trouble, and having endless amounts of BBQs and patio time with a ton of great food.
I mean, just open up the food options to everything and anything as long as there are delicious cocktails to go around right?
Well, let me fill you in on all the juicy details of these Super Easy Mint and Kiwi Mojitos.
They have this really sweet and sour kind of thing going on, and while I’m not a huge fan of actually eating fruit, I love fruity cocktails and fruity scents. Actually now that I’m thinking about it, I don’t think I’ve eaten any sort of fruit in like a week. Don’t you get scurvy or something doing that? Lmaooo…I mean, I love my veggies and all and have a ton at every meal, but I just don’t like the sweetness of fruit (even juice!) unless I’m getting my drink on.
And trust me, you will want more than one of these fizzy, delicious Kiwi Mojitos.
Basically, what you want to do here is puree the kiwis, a bit of lime juice and some mint together at the same time in a Magic Bullet or blender until they’re nice and smooth, then strain the fruit puree through a fine mesh sieve to get rid of the seeds and as much of the pulp as possible. It will be almost syrupy in texture and you might think you’re good to just mix it with the sparkling water and go from there, but trust me, you will have to sweeten it just a bit.
That’s where the simple syrup comes in. Boil some water, mix it with equal parts sugar (eg 1 cup water and 1 cup sugar) and then mix that with the kiwi-mint mixture. I love kiwis and all, but when they’re concentrated like that they can be really tart and kinda sour, especially when mixed with the lime juice. So you gotta have some simple syrup on hand as well as sparkling water or soda water to tone down all the tangy flavours and make them delicious.
From there, add your vodka. And yes, we are using vodka in these mojitos not because I’m trying to be trendy, but because honestly I hate rum and vodka has more of a subtle, flavourless taste. And I honestly think it blends better with the kiwi, even though rum suits lime juice nicely.
This may or may not have to do with the fact that rum was my go-to drink in high school (hey, we drink what our parents keep in the liquor cabinet okay?) and I might have gotten sick one too many times while enjoying this particular spirit…
All you need now is a pile of crushed ice and some extra kiwi and lime slices and you’ve got yourself one of my favourite new summer drinks.
