I have to say, I’m a chicken fiend. I eat boneless, skinless chicken breasts almost every day of the week. An expensive habit I know, but let’s just say I get a little help from the club packs at Costco and my freezer ;). Chicken is my go-to when I’m not sure what I want to have for dinner. It reheats well as leftovers, and it’s a nice, lean protein that really keeps you satiated for a long time. You just can’t go wrong. But sometimes I think we can all agree that the same old chicken dinner gets a little boring sometimes, right?

Well, I’m here to save the day with these Summer Spinach Stuffed Chicken Breasts! It’s by far going to be your next go-to summer entree, and it’s remarkably easy to throw together and customize to your taste. Forget that old spinach and ricotta version that is so overplayed – add some pesto, sweet corn and roasted red peppers into the mix for some fun seasonal flair!

I made a SUPER easy pesto for these Summer Spinach Stuffed Chicken Breasts, and I’ve used all kinds of delicious seasonal vegetables like zucchini, corn, red pepper and spinach. You can cheat like I did and use the jarred roasted red peppers, or you get throw ’em on the grill or even in raw to cook inside the chicken for a mildly sweet flavour.

Instructions
  1. Preheat oven to 425 F.
  2. If serving with a side such as waffle fries, start cooking them in the oven while preparing veggies and stuffed chicken.
  3. Prepare veggies as directed in ingredient list. Line a baking sheet with parchment paper.
  4. On a large cutting board, pound chicken with a mallet until 1/2 inch thick. On one half of chicken, spread sliced zucchini, 1 slice of roasted red pepper, about 2 tsp of corn kernels, a little bit of spinach and mozzarella cheese, then top with a few spoonfuls of the pesto.
  5. Season with salt and pepper then fold over the other half of the chicken. Tie with string if desired, otherwise make sure the chicken is fully folded over. Remove some of the veggies if necessary.
  6. Bake in the oven for 20-25 min until chicken is fully cooked.
  7. Serve with waffle fries and enjoy!

    Girl, I feel you on that chicken-in-bulk theory. But I mean come on, how can anyone resist a good chicken dish when it looks this good!? I’m totally loving this recipe and cannot wait to give it a try!

    I love some good chicken in the summer! I would love to give this a shot in my kitchen, but I’m about the worst cook you can imagine. I’ll have to see if anything like this is on the menu anywhere near me!

      Jack this is soooooo easy to make – you don’t have to be a stellar cook to try it out hahaha. Coincidentally, I just made some yesterday to take up north to the cottage tonight. The trick really is to be careful how you slice the chicken to stuff it – and you can use string to hold it all together if necessary!
