For the first time in a long time, I did not experience insomnia on a Sunday night! I have to say, I had a pretty great weekend – I had some friends over and enjoyed watermelon mojitos on the backyard deck, I went to the mall with my little brother hunting for some inspiration to dye my hair, I had two amazing workouts where I pushed myself really hard and I even managed to take in a bit of the glorious sun…I have to say, I really took some time out for me this weekend.

With everything going on in my life right now, I’ve been having bad anxiety about the future. Not that I have anything to worry about necessarily – I’m finally finishing my Master’s degree in journalism, I’ve received a few amazing opportunities to work with some cool brands on my blog and it’s looking like (with some discipline) that I will be able to pay off my student loans by December. I mean, that’s five months from now! I shouldn’t be worrying, right?

It’s not that I’m going crazy or that I’m ungrateful for every positive thing in my life right now. I mean sure, I feel overworked sometimes or a bit pent up now that I work from home, but life is pretty sweet and I have a lot to be thankful for. But as a freelancer, I feel like there are so many things I can’t control. There are only so many hours in the day and days in the week. Truth be told, I could constantly be working and I still don’t think I would accomplish everything on my never-ending to do list. That’s where my health and lifestyle have become very important to me as of late.

Nourishing my body, mind and spirit is something that really keeps me going, and I feel like it’s the one thing that I have come to rely on lately in the face of so much uncertainty. I mean, I know I’ve been featuring a lot of salads like this lately on my blog haha. I’m also obsessed with tahini dressings. Maybe uncertainty has been especially heavy on my mind because I’m in the middle of writing a magazine piece as the final project for my Master’s degree on the millennial generation and our individual hustles, making money and navigating a tough economy. Did I mention that I’m practically living out my thesis?

Well, this Shredded Summer Salad is just what the doctor ordered in terms of a healthy, satisfying lunch and it looks like I won’t be giving up my salad habit anytime soon! I’ve made no secret that I’m constantly super inspired by vegan cookbooks and recipes because of how creative they are, and because of the heavy emphasis on a variety of vegetables and colour. This salad is no different of course!

I added a variety of shredded raw veggies to this salad and like all my recipes, it’s up to you to customize this salad to your liking, but in case you want to replicate it exactly, all you need is the following:

  • beets
  • zucchini
  • red cabbage
  • carrots
  • watermelon radish
  • chickpeas
  • quinoa
  • sunflower sprouts

Basically, the formula to any great salad is to balance out the colours. As you may have noticed, this Shredded Summer Salad doesn’t really use any greens – I get so tired of the same old Kale Caesar salad or those that have a simple lettuce base with other veggies as a kind of afterthought. In this salad, all these seasonal summer vegetables are the star of the show – and it’s the perfect thing to throw together in the midst of a crazy day!

Instructions
  1. Prepare all veggies and place side by side in medium-sized bowls (I use deep pasta bowls).
  2. In a food processor or Magic Bullet, add all ingredients for Garlic Tahini dressing and blend.
  3. Serve with dressing drizzled overtop and enjoy!

    You are SO wise to take some time for yourself and focus on your health! Stress eats away at us.I remember the stress of the final months of my Master’s program well. It took me a long time to recover. This salad looks like an ideal antidote! Beautiful!

      Thank you so much Elaine – I don’t know that I’ll get much of a break after I finish my Master’s but at least I get to work from home now and the weather has started to perk up. But then again blog traffic dips in the summer so we all may be a bit on edge in some way or another haha. Can’t worry about what you can’t change right??
