Sausage Stuffed Acorn Squash

You may think of squash as a side dish but when you pair it with a lean protein like ground chicken and add a non-grain like quinoa, it becomes a super filling meal in its own right! My go-to squash is usually spaghetti squash but I decided to try something new and cook up this Sausage Stuffed Acorn Squash with Peppers and Goat Cheese. This dish is full of tasty vegetables and full of colour, and is very nutritionally dense.

The only challenging thing to this dish is cutting the acorn squash in half – it feels like you are cutting a log! After cutting your squash in half, scoop out all the seeds using a spoon or melon baller.

Acorn squash is the perfect substitute for potatoes or another heavy starch. It has an earthy taste, and many health benefits such as being a good source of vitamin C, vitamin A, potassium, and fiber.

A nice Pinot Noir or Chardonnay would be really suitable for this type of dish. You will want a type of wine that is very light and not too sweet because this dish is very filling and hearty.

This recipe is so filling and hearty that you won’t even need a side dish alongside it – one stuffed half was more than enough for me to eat and left me with some tasty leftovers. Surprisingly this meal microwaves really well and is a great idea for an office lunch that will rival that of your co-workers! Even though this meal may seem like a more challenging recipe to create, who can complain about two meals in one?

Instructions
  1. Preheat the oven to 400 degrees and microwave squash for 20-30 seconds so it's easier to cut in half.
  2. Prepare sausage: In a medium bowl, combine sausage ingredients (besides chicken stock) and mix well. Set aside and let flavours mingle while you prepare squash and other vegetables.
  3. Slice squash in half with a sharp knife perpendicularly. You should be slicing through the stem of the squash.
  4. With a spoon, scrape out squash seeds and membranes. Place in oven safe baking dish in 1/4 inches worth of water and roast for 25-30 minutes.
  5. Meanwhile, cook chicken sausage on med-high heat with 1 tbsp of olive oil for about 8-10 minutes, breaking up into 1 inch pieces of meat. Near the end of cooking time, add chicken stock and simmer for 2 min. Take off heat and set aside.
  6. Using the same pan, add 1 tbsp of olive oil and sauté garlic and onions for 1 min. Add red cabbage, cooking for 2-3 more min. Add peppers and cook for another 3-4 min. Finally, add quinoa, kale and sausage and cook for a final 2 min. Season every addition with a bit of salt and pepper along the way.
  7. By this time, the squash should be coming out of the oven. Scrape out a larger hole in each squash if necessary and then add sausage and vegetable mixture.
  8. Top with bits of goat cheese on each squash then return to oven to broil for 3-4 min.
  9. Enjoy!
