You may think of squash as a side dish but when you pair it with a lean protein like ground chicken and add a non-grain like quinoa, it becomes a super filling meal in its own right! My go-to squash is usually spaghetti squash but I decided to try something new and cook up this Sausage Stuffed Acorn Squash with Peppers and Goat Cheese. This dish is full of tasty vegetables and full of colour, and is very nutritionally dense.
The only challenging thing to this dish is cutting the acorn squash in half – it feels like you are cutting a log! After cutting your squash in half, scoop out all the seeds using a spoon or melon baller.
Acorn squash is the perfect substitute for potatoes or another heavy starch. It has an earthy taste, and many health benefits such as being a good source of vitamin C, vitamin A, potassium, and fiber.
A nice Pinot Noir or Chardonnay would be really suitable for this type of dish. You will want a type of wine that is very light and not too sweet because this dish is very filling and hearty.
This recipe is so filling and hearty that you won’t even need a side dish alongside it – one stuffed half was more than enough for me to eat and left me with some tasty leftovers. Surprisingly this meal microwaves really well and is a great idea for an office lunch that will rival that of your co-workers! Even though this meal may seem like a more challenging recipe to create, who can complain about two meals in one?
