Since I’ve moved home, I’ve been lucky enough to work remotely for the most part. But, there are days when I’m commuting for long hours and it’s difficult to find the time to eat. I’m sure you can relate at some points during the week – lunch is by far the hardest meal of the week to prepare!?
Well, fear lunch no more! They are also super easy to prepare ahead of time so you can meal prep on the weekend and enjoy these bowls all week long.☺
Radishes are coming into season now that it’s spring (although, with all this snow in Toronto I’m finding it hard to believe that patio season is around the corner!), and cauliflower is just going out of season so now is the perfect time to enjoy the two together. This bowl combines raw and roasted vegetables for a unique taste, and the cauliflower is so flavourful you won’t even need dressing!?
I have been trying really hard lately to stay in shape and eat more wholesome and healthy meals. The whole month of March was spent in the gym, on the Go train heading into Toronto for school and in the kitchen doing a crazy amount recipe development. It was a month of discipline and lucking out with client work.??
I did manage to squeeze in quite a bit of fun time with friends and family too, and of course those included “cheat” meals. I’m sure you’ve experienced this too: it’s human nature to let a few unhealthy meals dictate the rest of your diet, but I’m pretty proud of myself in that I have finally managed to get past that “all or nothing” attitude this month and focus on eating well 80% of the time while still letting myself indulge every now and then without guilt.
It’s all about nourishing your body and mind at the end of the day and I’d like to think that meals like these Radish, Falafel & Cauliflower Energy Bowls are well-integrated into my day-to-day life for a healthier lifestyle. I say that until I go out again this weekend!?
