Prickly Pear and Ginger Beer Cocktail

Ginger beer is one of my new obsessions this summer because of its spicy, unique flavour. I have been dying to find an excuse to make a ginger beer cocktail this summer and finally found the opportunity through another unique fruit pairing. Say hello to these Prickly Pear and Ginger Beer Cocktails!

I discovered prickly pear after doing some food blog research online, and I always have fond memories eating the prickly pear flavoured yogurt tubes as a kid. Let’s just say real prickly pear tastes nothing like those yogurt tubes, and is a mildly semi-sweet, brightly coloured fruit that not too many of us pick up in the grocery store.

Lime is a naturally delicious addition here. It provides a good pop of flavour and accentuates the understated flavour of the prickly pear, but it does not make the cocktail sour. Every time I have drank ginger beer, I’ve always incorporated a citrus fruit into the mix, and I think that it’s needed for such a spicy and intensely flavoured soda.

I’ve recently discovered edible flowers as a beautiful addition to cocktails. I meant to get some violets and freeze them in ice cubes as an accompaniment for this cocktail but couldn’t find them.

Most of the time they are seasonal in different grocery stores, kept in the organic salad dressing cooler with other pre-chopped vegetables. Keep an eye out for them there. In this photo, I simply used some outdoor flowers as a non-edible garnish. Pretties up the drink don’t you think??

These Prickly Pear and Ginger Beer Cocktails are a refreshingly different take on a summer drink using fresh prickly pear puree, ginger beer and lime.

Instructions
  1. Slice and de-skin prickly pear, then place in blender or Magic Bullet and puree until smooth.
  2. Strain prickly pear using a fine mesh sieve or strainer, twice. Result should be a smooth, syrupy liquid.
  3. Pour about 4 tbsp of the prickly pear syrup into a pitcher, then add bottles of ginger beer.
  4. Squeeze limes to get fresh juice and add to pitcher.
  5. To make simple syrup: combine equal parts boiling water and sugar. Add to pitcher.
  6. Mix all ingredients together then pour each cocktail over ice and decorate with garnish of your choice.
