Ginger beer is one of my new obsessions this summer because of its spicy, unique flavour. I have been dying to find an excuse to make a ginger beer cocktail this summer and finally found the opportunity through another unique fruit pairing. Say hello to these Prickly Pear and Ginger Beer Cocktails!
I discovered prickly pear after doing some food blog research online, and I always have fond memories eating the prickly pear flavoured yogurt tubes as a kid. Let’s just say real prickly pear tastes nothing like those yogurt tubes, and is a mildly semi-sweet, brightly coloured fruit that not too many of us pick up in the grocery store.
Lime is a naturally delicious addition here. It provides a good pop of flavour and accentuates the understated flavour of the prickly pear, but it does not make the cocktail sour. Every time I have drank ginger beer, I’ve always incorporated a citrus fruit into the mix, and I think that it’s needed for such a spicy and intensely flavoured soda.
I’ve recently discovered edible flowers as a beautiful addition to cocktails. I meant to get some violets and freeze them in ice cubes as an accompaniment for this cocktail but couldn’t find them.
Most of the time they are seasonal in different grocery stores, kept in the organic salad dressing cooler with other pre-chopped vegetables. Keep an eye out for them there. In this photo, I simply used some outdoor flowers as a non-edible garnish. Pretties up the drink don’t you think??
