I am so excited that it’s finally warm out here in southern Ontario. You know what that means – dinners out on the patio, long walks in the woods, taking a trip down to the city to explore…I’ve got so many exciting plans this summer that it’s hard to keep track! I think the reason I also have ten times more energy at this time of the year is because we officially get the most daylight in June. In fact, the longest day of the year is coming up in the next few days and it’s got me feeling like I can’t stop in the best way. Well, let me tell you about one of my new favourite dinners that’s helping me combat my inability to slow down…

This Green Pea Pesto Penne with Shrimp is going to become your next go-to pasta recipe: it’s ready in just 30 minutes, it’s filled to the brim with deliciously seasonal spring vegetables and come on, it’s carb city!!! Any more reason not to love it?

Peas are such an underrated seasonal vegetable, and they also happen to be local to Southern Ontario. My earliest memories of peas are from nights that my dad was away on a business trip: my mom would let herself take a break from making a fancy dinner and serve us Kraft Dinner, hotdogs and peas. Her justification of it was that we were still getting a green veggie even though the rest of what we were eating was essentially crap. As a kid, I never even realized peas were good for me – I enjoyed eating them so much I didn’t even notice the health benefits!

As an adult I’m trying harder to really include nutritious, seasonal ingredients whenever I make a new recipe. Living in an area where fresh produce is available almost all year round at farmer’s markets, I feel so inspired by the change in seasons each year and try to eat in accordance to that. Green peas are one such vegetable – did you know Canada is the largest green pea exporter? Who knew!

Now let me gush a little bit about this green pea pesto. Let’s just say I don’t think I will ever go back to ordinary pesto ever again, and it’s inspired me to start experimenting with other kinds of pesto. One thing I’m trying to do this month is discover all kinds of new pasta recipes – I find I easily get in the trap of making just one Alfredo sauce or red sauce. Like many of my other recipes, you can of course choose to include other proteins and veggies in this recipe, as well as change the pasta shape. You HAVE to try the pesto though, omg. Instructions
  1. In food processor, combine all ingredients for pesto, using a spatula if necessary to scrape down sides until blended. Alternatively, you could do this in a high power blender or in batches in a Magic Bullet.
  2. Meanwhile, cook pasta according to package directions and prepare veggies and shrimp. Drain pasta and set aside.
  3. In a large skillet, heat olive oil on med-high heat. Add shrimp and peppers, sautéing for 2-3 min. Add sundried tomatoes, cooked pasta and pea pesto. Toss until combined, and cook for 5 min until mixture is heated through.
  4. Serve and enjoy!

      Thanks so much Rachel!!! I love this time of the year for cooking and trying new things in and out of the kitchen. I’m only now learning to use a grill after years in the city without room for one. What I’m making so far is hit and miss with a little bit of burnt parts here and there LOL

      Hahaha thanks Meaghan! I’m so jealous you’ve been able to grow fresh peas! I grew some plum tomatoes this year but the racoons started taking the ripe ones in the middle of the night. Now the plant sits in the garage overnight lmao
