These moist meatballs are made with just eight ingredients and can be made a couple days ahead of any special occasion, and the vodka sauce is surprisingly easy, tasting great over penne pasta.
The catch? I’ve paired them together on toothpicks to make the perfect bite sized h’ors d’oeuvres for any patio party!

Pair these Penne alla Vodka and Meatball Bites with a delightful Pinnacle Vodka, lemon and soda--it's an amazing combination of summer fresh flavour.
Heat 1 tbsp olive oil on medium heat in a large frying pan. Mix meatball ingredients together and form into small balls, then place all together into frying pan, making sure to cook in two batches if pan is too crowded. Cook for about 10-15 min on med-low heat, making sure meatballs don't burn.
Cook pasta according to package instructions.
Meanwhile, heat olive oil on med-high heat in medium-sized saucepan, and then melt butter. Add shallots and garlic and sauté until fragrant, about 3-4 min. Add vodka, and cook until reduced to about half its liquid form, about 6-7 min.
Add tomatoes and cream, bringing to a boil then cooking on low for another 10 min. Add parmesan cheese and stir.
Toss sauce with pasta to coat. Slide two pasta pieces onto a toothpick, then slide on a meatball. Continue assembling bites until finished, and serve alongside a Pinnacle Vodka Soda with Lemon and enjoy!
