Party-Sized Kale, Spinach and Artichoke Dip

This Spinach and Artichoke dip is one of the first recipes I ever made as a kid. My mom really instilled in me a love for libraries, and I would look forward to going for a couple hours and looking around, picking up all kinds of different books. I would take out fiction horror stories, non-fiction textbooks, preteen magazines, DVDs, CDs and more, but what I always held close to my heart were recipe books.

The kids’ section had the best cookbooks–all the easiest and funnest recipes imaginable. So when I found a restaurant copycat recipe book with all kinds of special tips and tricks, I was thrilled. This book had everything from Big Mac sauce to Applebee’s loaded potato skins, and breadsticks from Olive Garden.

When I saw the recipe for TGI Friday’s restaurant-style Spinach and Artichoke dip, I knew I had to try it. It’s one of the first recipes I remember making from scratch by myself, and dare I say it, one of the best recipes I’ve ever made!

Now that I’m older of course I thought the recipe deserved a grownup twist, a slightly healthier one. Enter one of my favourite vegetables: kale! I also added a bit of spice and some red onion for a crunchier element, but if onions aren’t your thing you can always leave them out!

Instructions
  1. Boil spinach in 1 cup water on stovetop for about 5 or 6 minutes, then add chopped kale and artichokes and simmer for another 5 minutes.
  2. Near end of cooking time, microwave package of cream cheese in a large bowl for 45 seconds to 1 min.
  3. Drain spinach mixture, making sure there is little to no water left over. Add mixture to cream cheese and stir. Add parmesan and rest of ingredients, stirring to combine.
  4. Add mixture to an oven safe bowl and add grated cheese on top. Broil in oven for about 5 min until cheese is melted.
  5. Serve immediately with tortilla chips, pita bread and/or chopped veggies.
  6. Refrigerate leftovers for up to 5 days in the fridge, and reheat in microwave or oven until warm to serve again.
