Okay, busy days are honestly going to be the death of me.

You ever have one of those days (or weeks…or months…?) where you just have work piling up, and no matter what you seem to do it just never ends? I really feel like a hamster on a wheel some days, and it can be hard to keep the bigger picture in check when you feel like you have little time in your day to day to devote to additional activities other than just keeping your head above water.

Lately it feels as though I have been absolutely obsessed with my work. I’m on social media for fun less and less (which sucks because I used to really love Instagram!), and I feel like I have constant anxiety about the future. Not necessarily bad anxiety. But you know that feeling of wanting to grow and improve all at once? A never-ending excitement and anticipation for what’s next?

That’s where my head is at these days.

Do you remember those days you had to study for an exam or complete a project that literally took all day? You know, one of those days where you woke up, started work right away, and continued to work all day where the only breaks you took were for food and the washroom? Well, in this case, grab and go snacks like these Mini Buffalo Chicken Salsa Dip Jars are key, along with delicious gluten free crackers.

Specifically, Sanissimo Salmas!

I have become obsessed with these crackers. They taste like crunchy corn tortillas, and come in these cute little individual packages that are just made for snacking. With only 70 calories per pack, you can be sure you aren’t overindulging. They’re also oven-baked and made from just four ingredients with no artificial flavours or colours, so you can feel good knowing you’ve chosen a wholesome snack that’s also so simple, you don’t even need to think about it – even when you’re when you’re super busy and swamped. No meal prep here – just grab and go.

And they are practically MADE for these Mini Buffalo Chicken Salsa Dip Jars.??

Speaking of which, let’s talk about these cute little jars a bit more.???

They’ve got homemade refried black beans (my fave on things like tostadas, FYI), homemade guacamole, sour cream, salsa and diced buffalo chicken for an extra hit of protein. If you’ve got a long time between meals, these Mini Buffalo Chicken Salsa Dip Jars will definitely fill you right up and also satisfy that urge to reach for plain old chips and salsa. Boringggggggg.

And you should know my complete devotion to mason jars – they really are the ultimate transportable storage container. You can get a whole pack of them at hardware and craft stores, or you can also collect them when you finish up a jar of jam or some other kind of condiment. The medium jam jar sized ones just so happen to be the perfect serving size for these Mini Buffalo Chicken Salsa Dips.

I usually make a whole bunch of these Mini Buffalo Chicken Salsa Dip Jars at once and store them in the fridge for up to five days. My family goes nuts for them, and they’re a special treat in the middle of the week when you don’t have much else to look forward to.

Yes, I totally refer to food as the best part of my day quite frequently.

Don’t get me wrong, I love my job and everything. But given that I run a food blog full-time, are you really asking me if food is my first love?

Ask me again while I’m busy dipping into one of these salsa dip jars…?

What are some of your favourite on-the-go snacks? I’m a big fan of energy bites as much as the next person but sometimes I think people forget to offer up enough savoury snack ideas. I mean, I practically live on salty foods. Healthy salty foods of course…?

Will you be making these Mini Buffalo Chicken Salsa Dip Jars?

Instructions
  1. Heat olive oil over med-high heat in a small frying pan. Add diced chicken and buffalo wing sauce, cooking for 10 minutes and stirring every now and then until chicken is well cooked. Set aside.
  2. In a medium-sized saucepan, heat black beans over med-high heat. Add sour cream, chili powder, cheese, lime juice and salt. Mash black beans until well combined. Cook for 4-5 min, stirring often.
  3. Meanwhile, mash avocado and add lime juice, garlic and salt, mixing well to combine.
  4. Add mashed black beans to the bottom of each mason jar, distributing evenly. Top each with a couple spoonfuls of guacamole, sour cream and salsa, then finally buffalo chicken. Garnish with sliced green onion. You can refrigerate these jars up to 5-7 days and they travel well. Serve with Sanissimo Salmas and enjoy!
