Oh heyyyyyyy everyone! Happy Monday! Not going to lie, I already miss the weekend. I’ve had the most fabulous few weekends and it’s making transitioning to work during the week pretty difficult, especially now that the weather is nice.

In the summer, burgers are pretty much life for my family and I. You can dress ’em up, dress ’em down…there’s really no right way or wrong way to make them! These Mediterranean Burgers with Fattoush Salad are just another one of those burgers you can’t get wrong: they’re juicy, they’re paired with absolutely vibrant summer flavours and guess what? They’re chicken burgers! How much healthier can you get, right?

These burgers are an adaptation of one of my all-time favourite recipes: the Canadian Living Reputation Building burgers. Though they aren’t called this anymore on their website, my mom has a stack of older Canadian Living magazines that highlight the best summer recipes and these babies are in there. If you haven’t checked out this recipe yet, then you’re seriously missing out. It will definitely make you question why you ever ate another burger in the summer to begin with.

And speaking of summer and burgers, can you please promise me to never ever eat another frozen, boxed burger again? Please? I don’t think people truly appreciate how much better a made-from-scratch burger really is, and they are super easy to throw together so there really is no excuse!

Canada Day and Fourth of July are both coming up quick, meaning that summer really is in full swing. That’s right folks – from here on out, I think we can look forward to scorching hot days, tanlines, BBQs and great food. This summer I’ve had some fantastic experiences so far, and the season is only getting started! Though I moved from Toronto at the beginning of March, I have been back down to the city so many times since that it almost feels as if I’ve never left. After a breakup last summer resulted in me feeling really lonely, I’ve finally started feeling back to my old self again. I’ve really realized the power of friends and family in helping me heal from some turbulent situations last year, and I honestly can’t say I’ve been happier. There’s just something in the air this year that makes me feel like everything is going my way, and the future will sort itself out.

Instructions
For the burgers:
  1. Preheat BBQ to med-high heat. In a large mixing bowl, mix all ingredients together well. Form meat mixture into equal-sized patties, then place in between wax paper for easy removal. You can freeze these burgers for a couple months, and they'll keep up to one or two days in the fridge depending on when you bought the meat.
  2. When ready to grill, brush sides of each patty with olive oil until well-coated. Grill on med-high heat for about 7-8 min per side until centre of the burger is fully cooked. Don't be tempted to flip burgers too soon or they will stick to the grill and fall apart.
  3. Once cooked, remove burgers and place on top of one piece of Boston lettuce each. Top with fattoush and serve with pita bread and dill dip.
Fattoush:
  1. Mix all vegetables together and let sit for at least 15 min to let flavours mingle. Spoon overtop of burgers and serve with dill dip on the side.
Dill Dip:
  1. Mix all ingredients together. Serve on the side with pita bread.

    I make homemade turkey/chicken burgers at least a few times a month because me and the bf love them so much. I haven’t done a Mediterranean version yet, so I definitely will need to try these!

    Friends and family are pretty awesome for their healing powers. Glad you’re doing better! 🙂
