Kale Caesar Salad with Avocado Dressing

I love salads, especially coming into the warmer months. This kale caesar salad with avocado dressing is a healthier, lower-fat option than the traditional caesar, and you can even get away with a couple of extra vegetables or two like our added red onion and red pepper. Keep reading to find out how to make this deliciously simple salad. Just add some sliced chicken breast and you’ve got a high-protein meal!
The lemon adds a bit of a punchy zest to this caesar salad recipe, and is much needed to balance out what can sometimes be the bitter taste of kale. The creamy avocado also helps to soak into the tough kale leaves without leaving a strange or overpowering taste.
Though some of the items we use in this recipe are store-bought – like the Ace Rosemary Crisps and the first half of the Caesar salad dressing base – it’s a fun and healthy spin on the original high-calorie salad, and does not compromise on flavour!
I also included a bonus recipe for Roasted Chickpeas, which you can easily use to replace the croutons and add more protein to this salad. These crunchy legumes are a great addition to this salad if you have the time, but for this particular recipe we did use store-bought croutons to save on time and effort.
I recently discovered hemp hearts and how they are an excellent source of protein, so I decided to add a bit of these in to compensate for using less parmesan cheese to keep the recipe lower in calories. Not only are they really nutritious and healthy for you, they also complement the avocado in that they are a good source of healthy fats.
