A Southwest Steak and Grilled Romaine Salad in fact, which just so happens to be perfect for those lazy Friday nights you don’t feel like cooking, but still want something with a TON of flavour.
Trust me, I get the weekly grind and the exhausted feeling that Friday night can sometimes throw at you. It’s so tempting to just say screw it and head to Subway or something, amirite?!
But not when you’ve got a magical 30-minute meal up your sleeve like this Southwest Steak and Grilled Romaine Salad. But whoever has done steak wrong though? I swear it’s nearly impossible, unless you overcook it of course.
I don’t know about you, but I’ve found myself way too tired to go out at the end of a work week. It’s kind of sad because I’m only in my mid-twenties and already feeling like a granny on a Friday night.
I mean, Fridays used to be my jam. Back in university, I made sure I always picked a schedule for myself where I didn’t have classes on Fridays. I would use the day to work on homework and then run errands before rush hour, getting snacks and drinks and all sorts of goodies to have some friends over and then go out afterwards to a bar.
Nowadays, I’m lucky if the clock hits 11 and I’m still awake on a Friday. Such is the life of a working woman I suppose. Did you miss my glorious homemade mint fudgsicle recipe yesterday where I talked about already missing school? Yep, the nostalgia’s happening already…
So even if I don’t manage to stay up past 11pm tonight, I’m still definitely going to celebrate. Another work week over with is certainly an excuse for a reward, so tonight you’ll find me with a big Blackberry Bramble cocktail out on the back deck grilling up this salad, lazy girl style. Because Fridays will always remain the best time to reward yourself.
And by reward, I mean food. Lots of it.
