Happy Thirsty Thursday! Or in my world now, it’s also known as the sleepy second last day before the weekend where I tend to grab takeout, veg out on the couch and catch up on my favourite TV shows. Life as a young professional is so exciting right? But seriously though, I have absolutely loved kicking back with a drink or two on a Thursday night watching the Thank God It’s Thursday round-up of Grey’s Anatomy, Scandal and The Catch – I’m kind of sad that most of my fave prime time shows are over for the summer!!!
Well, when in doubt, drown your sorrows in some Grilled Lemon, Chili & Passionfruit Cocktails right? The purple passion fruit is native to Brazil and Argentina, and actually originates as a type of passion flower vine. Botanically, passionfruit is apart of the berry family. The slightly tart-flavoured seeds and juice are often used in desserts, but they are actually a very healthy fruit high in fibre, vitamin C and beta carotene. And you’ve seen them probably a billion times in the grocery store, so why not just go out on a limb and try one?
Though I’m sad about my favourite shows ending, I am loving the warmer weather, working out outside and starting to cook up some of my favourite summer recipes! I’m making Tuna Steak Poke Bowls, Spiced Vegetable BBQ Packs, these fun sliders, this Mexican Corn on the Cob and these delicious Steak & Kimchi Summer Rolls. Too many cravings, too little time!
I don’t know about you, but I’m also finding myself more open to different opportunities and experimenting in the summer months, whether that’s in the kitchen or just trying new activities and networking in general. I find more time for coffee dates with new people when it’s nice out, I find new inspiration for weekend DIY projects…the sun just gives me the energy to be more productive and embrace new adventures. I don’t know what it is!
In the spirit of maintaining an open mind and trying new things, I discovered two new culinary techniques with these Grilled Lemon, Chili & Passionfruit Cocktails – grilling lemons, and extracting juice (or nectar, whatever you call it…) from passionfruit!
Getting the juice from a passionfruit can be a bit difficult, but it contains such a pungent, powerful nectar that you don’t need a lot of it to really bring out the signature flavour. I also added some chili peppers to vodka I had laying around, which adds a bit of an extra kick to this cocktail. It isn’t exactly spicy, but there’s a bit more of an edge to this fruity cocktail. You can decide to skip it on this recipe and just add regular vodka, but if you change your mind and decide you want to try your hand at infusing alcohol again, I have a handy guide that’s just waiting for you to experiment with!
