When I’m planning a summer dinner party, I want only the best. This extends to everything from the decor and party theme to of course the food and drink. I will be finished my Master’s degree in a couple of months, and my birthday is right in the middle of summer. Needless to say, there will be lots of celebrations at my house this season where I will be serving up signature cocktails and all kinds of delicious, tasty snacks.

This Fire Roasted Tomato And Olive Bruschetta recipe is definitely going to be one of my go-tos: it’s a light, delicious appetizer that can be made ahead of time before guests arrive, and also it contains organic ingredients!

As someone who considers themselves quite a foodie, I try to choose the highest quality ingredients for all my recipes. At the same time, my recipes need to be fun, easy and use ingredients that are affordable. I really think Muir Glen has done a phenomenal job of balancing the need for quality, organic ingredients with an affordable price tag: their tomatoes are field grown and vine-ripened with no synthetic pesticides or fertilizers. The fire-roasted tomatoes make for one delicious twist on bruschetta let me tell you!

Fire Roasted Tomato And Olive Bruschetta Yum
This Fire Roasted Tomato And Olive Bruschetta is the perfect appetizer to serve during your next summer party. Only the best will do!

Instructions
  1. In a medium-sized bowl, mix tomatoes, olives, roasted peppers, basil and olive oil together.
  2. Spread goat cheese onto toasted baguette slices. Top with tomato mixture.
  3. Alternative: leave out goat cheese, and top tomato mixture with parmesan cheese. Broil in oven for 1-2 min on high.
  4. Serve immediately.

    an interesting take on a classic! I like the idea of smoke from fire roasted tomatoes and that briny quality that olives bring to bring another dimension to the fresh herbaceous flavors of bruschetta

    I’m so excited about this! As a fellow Torontonian foodie, there are many instances when a recipe simply needs the best and a fire-roasted tomato will only do! Believe or not, I often will drive across the border into the United States to stock up on canned fire-roasted tomatoes, because I cannot find them anywhere within the GTA. Taylor, do you happen to know which markets will carry the brand? I’m assuming that since you’ve partnered this post with PC, then Loblaws might carry the brand? Either way, great looking bruschetta! I’m just over the bridge from Yonge and Bloor – I’ll expect my invitation to your summer get-togethers soon. 😉 Cheers!

    So yummy! That’s the kind of food I can eat around the clock, and no hassle with cooking 🙂
    Alternatively, put on top a slice of Parma ham and arugula, drizzle with olive oil 🙂
