Meatloaf…it’s an old dish that you think of when you reminisce about family meals at home. Sometimes it’s possible to view it as good ole’ comfort food and other times, it’s not quite as glamorous as some of the other foodie trends you’re dying to try. This ground chicken meatloaf recipe may seem as though it takes a long time and is complicated, but I promise it’s super easy. And surprisingly, it’s a low-calorie, elevated version of the dish my mom cooks.

What I like most about this meal is the fact that once everything is prepared, it goes right into the oven and you can count on at least half an hour of relaxation while everything cooks!

Asparagus is coming in season now that it’s spring, so I paired my meatloaf with this delicious vegetable tossed in balsamic vinegar and garlic, and included some beautiful blue, red and white baby potatoes tossed in olive oil and seasoned with rosemary and sea salt.

The ground chicken meatloaf also has a hint of rosemary to complement the flavours of the potatoes. This meal idea is so simple and will definitely remind you of your mother’s cooking – I’ve just jazzed it up a bit! If you’re looking for the ultimate spring comfort food dish, this is it!

Comfort food of course calls for wine. The perfect wine pairing with this simple ground chicken meatloaf is a nice Chardonnay: a medium, full-bodied with apple and pear aromas keeping the palate fresh – one of my favourites is Cupcake Vineyards.

Blue potatoes add a nice colour to the dish while offering many nutritional benefits. They are rich in antioxidants and are a good source of dietary fiber, which helps you fill up, regulate blood sugar and prevents high cholesterol.

With so many healthy elements to this dish, you’ve got to try it one of these nights – it’s also surprisingly a relatively low-cost meal!

Instructions
  1. Preheat oven to 400 degrees and grease small oven-safe pan with 2-3 tbsp olive oil.
  2. Mix all ingredients together for the meatloaf, and press into pan, making sure edges of the pan have remained fully greased. Place in oven and cook for 45 minutes.
  3. Meanwhile, cut baby potatoes in half and toss in olive oil and herbs. Place in oven for 40 minutes.
  4. While everything else is cooking in the oven prepare the asparagus by cutting about an inch off each stem. Toss in oil olive, balsamic, garlic and season with salt and pepper. Coordinate cooking time with other dishes by placing this dish in the oven to cook with 10-15 min left.
  5. Take everything out of the oven at the same time and serve. It's that easy!
