Meatloaf…it’s an old dish that you think of when you reminisce about family meals at home. Sometimes it’s possible to view it as good ole’ comfort food and other times, it’s not quite as glamorous as some of the other foodie trends you’re dying to try. This ground chicken meatloaf recipe may seem as though it takes a long time and is complicated, but I promise it’s super easy. And surprisingly, it’s a low-calorie, elevated version of the dish my mom cooks.
What I like most about this meal is the fact that once everything is prepared, it goes right into the oven and you can count on at least half an hour of relaxation while everything cooks!
Asparagus is coming in season now that it’s spring, so I paired my meatloaf with this delicious vegetable tossed in balsamic vinegar and garlic, and included some beautiful blue, red and white baby potatoes tossed in olive oil and seasoned with rosemary and sea salt.

Comfort food of course calls for wine. The perfect wine pairing with this simple ground chicken meatloaf is a nice Chardonnay: a medium, full-bodied with apple and pear aromas keeping the palate fresh – one of my favourites is Cupcake Vineyards.
Blue potatoes add a nice colour to the dish while offering many nutritional benefits. They are rich in antioxidants and are a good source of dietary fiber, which helps you fill up, regulate blood sugar and prevents high cholesterol.
