I LOVE tacos. It’s the perfect meal to celebrate Cinco de Mayo, a day of victory for Mexico to commemorate the Mexican army‘s unlikely victory over French forces at the Battle of Puebla on May 5, 1862.

Here’s my super simple Mexican-style tacos recipe with Cajun-spiced chicken piled on authentic corn tortillas and topped with fried onions, fresh cilantro, sliced jalapeños, organic corn and fresh tomatoes!

The LCBO is also kicking off summer the right way with a celebration tonight at The Drake Hotel – there will be plenty of Mexican tapas, tequila cocktails and more for just $15 at the door! Pop in tonight, it’s the perfect way to celebrate Cinco de Mayo. Who doesn’t love Mexican food?

Instructions
  1. Mix together cajun spice mix and season sliced chicken with lemon juice, olive oil, salt and pepper before putting into a 400 degree oven for 20 minutes or until chicken is cooked through.
  2. Stir fry yellow onion on high heat for 5 minutes before removing from heat and setting aside.
  3. Once chicken is almost done cooking, heat tortillas up in oven for up to 5 minutes until soft and warm but slightly crispy.
  4. Chicken and tortillas should be done at the same time. Take out and top tortillas with chicken, onion, corn, tomatoes, cilantro, jalapeño, and salsa. Add shredded cheese if desired.
  5. Put sour cream into a corner of a ziploc bag and cut a tiny hole in the corner, piping out across tacos for a cool plating effect.
  6. Serve with tequila of course!
