Mmm breakfast!! As the weekend approaches, you may be wondering where you’re going to go out for brunch, or thinking of picking up ingredients for a delicious breakfast in bed for that special someone. Well, we’ve got you covered with this delicious twist on the classic weekend meal!

Sweet potato hash is the perfect accompaniment and a healthier, lower-calorie version of traditional breakfast hash, which usually involves some sort of potato and bacon component. We’ve incorporated some turkey bacon and fresh peppers for a delicious twist, and seasoned them with a tiny bit of our famous Cajun seasoning.

Avocado toast is a big trend in the food world these days, and a super tasty way to get in healthy fats. Topped with a fried egg and chili flakes, we love this breakfast option! Making the perfect fried egg looks easy but in reality, it can be quite challenging. We find that you have to get the frying pan just hot enough on medium heat with the perfect amount of oil–usually at least 1/2 – 1 tbsp of olive oil per egg to ensure they don’t stick. Gently crack your egg and slide it on to your greased pan, and cook on med-low heat for about 4-5 min, minding the bottom doesn’t stick.

Instructions
  1. Preheat oven to 450 degrees. Mix together Cajun seasoning (if you don't already have it on hand).
  2. Cut sweet potatoes into tiny cubes, toss with 1/2 tbsp olive oil, salt and pepper and Cajun seasoning and cook in oven for 20 min, flipping potatoes at the halfway mark.
  3. Meanwhile, chop peppers and cook turkey bacon.
  4. Mash and mix avocado with salsa, salt & pepper and chili flakes. Spread over whole wheat toast.
  5. Cook eggs by heating oil in frying pan over medium heat. Gently slide eggs into frying pan and cook over med-low heat for 4-5 min. Top toast with egg.
  6. Potatoes should be ready to come out of the oven. Using egg fan, heat 1/2 tsp of olive oil and fry baked sweet potatoes, peppers and turkey bacon for 4-5 min until peppers are cooked but retain their crunch.
  7. Serve toast and hash together and enjoy!
