I had the most CRAZY BUSY weekend ever. As in working, errand running and organizing.

Part of the reason why I’m posting so late in the day.

I know, I know. I’m sorry.

Little miss procrastination over here.

If you can believe it or not, I’ve actually spent most of the morning online shopping and baking things with lots and lots of sugar.

I think I’m burned out!

I mean, I even left the gym after a grand total of 20 minutes yesterday.

Not even these Energy Bites can save me.

I think I’m just so overworked lately and just waiting for the holidays to begin.

But there’s only one problem – you know, all the stress behind the fun times leading up to Christmas?

I mean seriously, there is just too much to do. Like, 24 hours is not enough time in the day.

And just like me, you just don’t have the time to make up so many holiday appetizers – you need ’em to come together quick and easy.

Well, good thing I’ve got us both covered, right?

These Artichoke & Asiago Stuffed Baby Potatoes come together with just five easy ingredients, and they are easily made ahead of time so you can bring ’em to any holiday party you’ve got coming up and stuff them back in the oven for 5-10 minutes.

BAM!

I’m talking delicious, bite-sized pieces of heaven with my fave Summer Fresh Artichoke and Asiago dip.

Everyday gourmet you could say.

I won’t even tell any of your friends how easy these were to make. They can be our little secret. 😉

Anytime we get together for a special occasion, my girlfriends and I pick up a tub of this gourmet dip – it’s a special treat we indulge in every once in a while.

Like going to the cottage, my recent grad party, Friendsgiving…

Anytime really.

And if we’re reallyyyyy hungry, the whole thing is devoured in about five minutes.

The sad part is I’m not even joking.

But seriously though, these Artichoke & Asiago Stuffed Baby Potatoes need to get in my belly ASAP.

I might even be back to procrastinating and making them as we speak.

Artichoke & Asiago Stuffed Baby Potatoes

Instructions
  1. Preheat oven to 450 F. On a parchment lined baking sheet, spread out baby potatoes. Toss in olive oil, then bake for 25 min until potatoes are softened.
  2. Remove from oven and let cool at least 10 min before scooping out pulp from each potato.
  3. Dump into a large bowl and toss potato pulp with Artichoke and Asiago dip, turkey bacon and green onions. Bake another 15 min, then top with cheddar cheese. Bake for 3-4 min or until cheese is just melted. Serve and enjoy!

    Taylor these are amazing! A perfect recipe for #freshAPPYS and the holiday season. I always need more potatoes in my life and with the dip it catapults the potatoes into the “out of this world” category. And I feel ya on the 20 minutes at the gym recently – I went to a new class on the weekend and couldn’t move yesterday from it. SO out of shape!

    Asiago is one of my favorite cheese and I don’t eat it enough. Love that it’s mixed into an artichoke dip and all ready to go. These stuffed baby potatoes look fabulous! I’m sure I”d eat way (way) too many!
