It’s Valentine’s Day weekend here in the city, and it’s my first single one in about four years. Now before you go getting all sympathetic for me, I’m actually pretty happy! I’ve been rediscovering new aspects of myself and enjoying a little more much needed me time…and even better: I’ve really been enjoying all of my friendships new and old, and would like to think that I’ve been extra open to new opportunities that have come my way in the past 8 months.

So this Valentine’s, I’m switching things up. I’ll be having a party with all my friends – single or not – and you know parties call for tons of tasty snacks and appetizers! Enter the 30-Minute French Onion Soup Crostini.?

Red wine is one of my go-to beverages during the colder weather, but I also really love to cook with it! It’s amazing what a splash of wine will do for those one pot meals (like this Beef Stroganoff), or the flavour it can bring to a soup. In this case, the caramelized onions, garlic and red wine mingle very nicely, and the finished recipe pairs very nicely with a cabernet sauvignon or merlot.??

This French Onion Crostini literally takes all your fave flavours of French onion soup, from the deliciously velvety and luxuriously melted Swiss cheese to the rich flavour of caramelized onions. The one thing I hate about French onion soup, however, is how long it takes to make! I’ve managed to reduce the time, but keep all the flavour, and even make your favourite soup hand-held and party-friendly!??

Even if you’re not having a party can’t you just imagine serving these up as a special treat before dinner? Curl up on the couch, choose a great movie, grab a glass of red and kick back and relax…now this is my favourite kind of Friday night!

Instructions
  1. In a large pot, heat olive oil over medium heat. Add butter. Once butter is melted, add onions and garlic and sauté for 5 minutes, stirring often until onion becomes tender.
  2. Add red wine, salt, pepper and thyme and sauté for another 5 minutes, stirring often.
  3. Add flour gradually, stirring to coat onion mixture. Add beef broth slowly, whisking to avoid lumps.
  4. Bring to a boil and then simmer, letting mixture reduce to the point where most of the liquid has evaporated, thickened and been absorbed by the onions.
  5. Meanwhile, set oven to the highest broiler setting and prepare your crostinis on a baking sheet. If using a baguette, thinly slice on a diagonal and toast in the oven for a couple of minutes per side. You can toast the bread with or without olive oil and salt. If you want to save a bit of time, you can buy store-bought crostinis and directly spoon French onion mixture overtop without pre-toasting.
  6. Once each crostini is topped with the onion mixture, finish with grated Swiss cheese and broil in the oven for about 1-2 minutes until cheese is melted.
  7. Serve right away and enjoy! To make ahead, French onion mixture can be refrigerated for up to 48 hours and served on crostinis when guests arrive!
